  • 2 pounds ground turkey
  • 2 cups fresh bread crumbs (about 3 to 4 slices of bread; see Notes)

  • 1 scant cup ketchup
  • 1½ teaspoons ground cumin
  • 1 teaspoon chopped fresh thyme leaves
  • 1 teaspoon salt
