- 225g unsalted butter , softened
- 150g golden caster sugar

- grated zest unwaxed lemon
- 250g plain flour , plus a little extra for rolling out
- tsp baking powder
- tsp ground cinnamon
- 8 heaped tsp raspberry jam
- icing sugar , to serve
